No one would guess how easy this vegan, healthy mousse recipe is — it only has three ingredients: silken tofu, dark chocolate chips, and warm, unsweetened soy milk. If you don’t have soy milk, feel free to replace it with a milk of your choice. You can whip it up in under a minute with your high-powered Blendtec or Vitamix blender, or do it with a “regular” blender. HEALTH BENEFITS & FUN FACTS
Sneaking tofu into your diet is a good idea for a number of reasons. It’s super inexpensive: Asian markets and some big box stores often carry varieties of tofu starting at $1/package. In addition to being budget-friendly, tofu is high in protein, low in fat, and very low in saturated fat. It can help to lower cholesterol and prevent cancers, especially breast and prostate cancer.
As with all foods, soy is best eaten in moderation and as a whole food–such as tofu–since concentrations of soy contain high levels of estrogen. A perfect daily serving size of tofu is 4 ounces – a generous serving in this vegan dark chocolate mousse!

BANANA & CASHEW ICE CREAM FROZEN POPS RECIPE
This recipe is all of our favorite things combined and frozen into one frosty and delicious snack or dessert. You can even keep vegan unless you want to dip it in milk or white chocolate instead of dark!! You’ll want to soak cashews in advance for this, so soak them in the morning, freeze mid-day, and enjoy mid-afternoon if you’re planning on having after-school visitors or a family-friendly dinner party. It’s super simple, too – just blend in your Vitamix or Blendtec until smooth and then freeze. You can do it in a “regular” blender too. We LOVE the popsicle molds by Tovolo, but there are many fun ones to choose from. The recipe includes an optional chocolate coating dipped in nuts and/or coconut – so decadent! Though it’s just as good without.

Fruity frozen ice pops are a great way to get in an extra serving of fruit (or two), so make sure to join our community for more frozen dessert recipes! And share your rating with us below if you give this one a try!

HEALTH BENEFITS & FUN FACTS OF BANANAS
Bananas are known as the whole-food “energy drink”, so it’s no surprise that bananas sustain blood sugar during a workout and prevent muscle cramps. They also have a lot of tryptophan, which is converted into happy-making serotonin. Bananas can reduce swelling, protect against diabetes, aid weight loss, and strengthen the nervous system thanks to high levels of vitamin B6. They even contain iron, which is super important for those with a plant-based diet.
